This is an easy and guilt-free dessert with no refined sugar. Layers of creamy cashew “custard”, toasted coconut, and sliced fresh bananas. Your taste buds will be singing! Perfect whenever you want a nice and simple treat.
Use organic ingredients when possible
1 ½ cups cashew butter or sunflower butter
¼ cup raw honey
Juice of 2 limes or 1 lemon
1 tbsp lime zest (optional)
2 tsp pure vanilla extract
Pinch of sea salt
4 ripe bananas, peeled and sliced
1 ½ cups shredded coconut, lightly toasted
Pinch of ground cardamom for each parfait, to garnish (optional)
In a blender mix the cashew or sunflower butter, honey, lime or lemon juice, lime zest (if using), vanilla extract, and sea salt. Add two or three good splashes of water to get a nice pudding-like consistency. Blend until creamy and smooth.
Layer 1 heaping tablespoon of cashew custard into the bottom of 6 parfait glasses or bowls. Alternate layers of toasted coconut and bananas with cashew custard until the glasses are filled almost to the top. Garnish each parfait with a pinch of ground cardamom (if using). Let stand in the refrigerator for about an hour to set. Then serve.
